Daniel Etienne Defaix Chablis Vieilles Vignes
Daniel Etienne Defaix is one of the oldest and best properties in Chablis, in the Defaix family for 14 generations over 400 years. Their ethos is distinctly different than many other Chablis producers through dramatically longer time on lees along with long bottle aging at the estate to produce profoundly concentrated and complex Chablis - still without the use of any oak.
The region of Chablis sits halfway between the Champagne region and the ‘Cote d’Or’ of Burgundy. Soils in Chablis are Kimmeridgien Marl – a type of calcareous limestone full of ancient oystershell fossil that brings a freshness, flintiness and unique mineral flavours to the wine unlike the rest of Burgundy.
Matured for 18 months on lees and a further 3 years in the bottle before release. Vibrant gold colour, aromatic white peach, green apple on the nose with a soft palate and good length and restrained minerality.
