Dry and nutty sherry of 20 years old made from 100% Palomino. The Palo Cortado is in effect a special sort of old Amontillado. Completely dry, it has roasted hazelnut and toasty aromas, then a remarkably complex palate that comes from long ageing in barrel.

The Jerez Cortado Wellington from Bodegas Hidalgo is an outstanding VOS Palo Cortado. The amazing thing about these old sherries is that the winery actually needs to schedule an appointment with the Consejo to unlock the barrels to bottle it.

A round, plush mouthfeel of toasted nuts and caramel are enlivened by a saline note that make this dry sherry a treat. Try this with some sliced jamon iberico or any dish with mushrooms. Absolutely excelente.
