Classic Red Burgundy from Chambolle-Musigny in Cote de Nuits.
Jaffelin considers themselves the 'smallest of the great Burgundy houses. They produce 45 different wines in small volumes, 9th in size in Burgundy. Roughly half their wines are made in their 12th Century cellars immediately adjacent to the Cathedral in the centre of Beaune.
Chambolle-Musigny wines are sometimes regarded as the most “feminine” wine of the Côte de Nuits; its intensity and delicacy express themselves with elegance and subtlety. Luminous bright ruby hue, bouquet typically composed of violet, raspberry, strawberry. With further aging it tends towards spiced ripe fruits and prune, or towards truffle, underbrush and animal notes. Rich, fragrant and complex, it lines the palate with silk and lace. Its delicate but fleshy texture in no way detracts from its solid and durable structure, its tannins remain silky-smooth.
100% Pinot Noir. The grapes are picked and sorted by hand. Maceration lasts for 3-4 weeks with the extraction carried out mainly by punching down operations (pigeage). The wines are aged for 16-18 months in French oak barrels, of which around 40% are new.
