Jaffelin Savigny-les-Beaune Premier Cru 'Les Vergelesses'

Classic Red Burgundy from Savigny-les-Beaune, Premier Cru from the 'Les Vergelesses' Climat. 

Jaffelin considers themselves the 'smallest of the great Burgundy houses. They produce 45 different wines in small volumes, 9th in size in Burgundy. Roughly half their wines are made in their 12th Century cellars immediately adjacent to the Cathedral in the centre of Beaune.

An east-facing parcel situated mid slope. Very stony, shallow, clay soil. 'Les Vergelesses' name relates to the proximity of an old Roman road running « from Beaune to Vergy ». The name is made up of two words: Vergy and lesse (up there).

The grapes are picked and sorted by hand. Maceration last around 3 weeks with extraction carried out via pumping over and punching down operations. In general, the grapes are entirely destemmed. The wines are aged for 16-18 months in French oak barrels, of which 30% are new.

Pale colour, aromas of mushroom, truffle and black cherry. Full mid palate, long savoury finish, showing some evolution but still quite bold.
