Famille Laplace Chateau Aydie Madiran
Superb wine made using grapes from vines with an average of 30 years of age in Madiran, the home of Tannat.
Grapes are handpicked, receiving a pre-fermentation cold maceration for around five days in wooden vats at 10-12 degrees Celsius. A long fermentation then takes place at 25 degrees over a 30 day maceration period. The wine is then aged in oak barriques and casks for 12-15 months, and aged for 20 months before release.
Chateau Aydie Tasting Note:
Deep and intense ruby colour with a red tint. Fine, elegant and complex nose with mingling aromas of black fruit and coffee. The attack is defined and ripe with silky tannins and a woody finish. This is an exceptional Madiran with power and complexity. Serve with stews, duck and red meats (grilled beef ribs), or sheep cheese of the Pyrenees.
